Aroma: Mustard honey has a little spicy aroma. It has a short burst of spicy mixed with some earthy aroma in the after note.
Taste: It has a slightly warm caramel-like taste. The honey takes a creamy, waxy texture at low temperature with the undertone taste of slight spicy confection. It is one of the sweeter kinds of honey that has a shorter finish and doesn’t linger on the palate for very long. It has a smooth texture during the warmer seasons and a slightly grainy texture during winters.
Color: Burnt sugar or Raw sienna during the warmer season and takes a creamy, tan color during winters. The tan color has given Mustard honey the moniker of cream of winter.
Consistency: Slow drip consistency that turns thicker within a few weeks into a jam-like viscosity.
Nectar and Flower: Mustard has small yellow and white flowers.
Location: Mustard seeds are mostly grown in and around Northwestern India with Punjab, Rajasthan, Uttar Pradesh, Haryana, Gujrat being the major producers. The yellow variant is predominantly cultivated as a rabi crop. They come to full bloom during the cooler seasons. While farmlands covered with these yellow flowers have been romanticized in reel life, these act as a huge foraging ground for the bees.
Uses of Mustard Honey:
Elixir for Skin: Mustard honey is a reservoir of phytonutrients and enzymes which makes it highly nourishing for the skin.
