In India, traditionally, for any ailment we peep into our kitchens to find if there are any herbs and spices as a cure; we specially look for a semi-liquid product – “GHEE”. Our parents and grandparents regularly advised us to take a spoonful of ghee daily for good health and fitness. Ghee has many health benefits. Making Process – Bilona Method
India’s desi or indigenous cow breeds like Sahiwal, Rathi, Tharaprkar and Gir produce richer A2 milk because they are grass-fed – a natural diet rooted to the soil and the land as the cattle roam free as they graze. Not surprisingly the milk is of a better quality; more milk is produced in a natural way. Once the milk is produced the process of making A2 Cow Desi Ghee begins.
This is known as the Bilona or Valons method. The milk from the indigenous cows is boiled and allowed to cool at room temperature before carefully calculated naturally cultured enzymes are added to make it curdle. Then it is left overnight. Once it is well curdled, the milk is churned by hand using the traditional process of Bilona – the movement being clockwise-anticlockwise to produce a rich butter known as Makkhan.
Once the milk has been churned into butter, it is ready for the next stage. A2 Cow Desi Ghee is produced by heating the Makkhan for a long time over a low flame. The end product is A2 Cow Ghee.
