Color: Very light in color. It is almost transparent with a hint of color ranging from liquid glass to a pale golden tint.
Consistency: It is thinner than most honey and remains liquid longer. This could likely be due to higher fructose content.
Nectar and Flower: Acacia has many local names including Babul and Kikar. Found on the Himalayan foothills, Acacia has big thorn and white or yellow flowers. The flowers start to blossom in May.
Location: Regions of Kashmir. The cool weather and pristine conditions help to nurture the lush green valleys of Kashmir that are covered by forests of Acacia and their white, yellow flowers. Due to high demand in the export market, most Kashmir honey is collected and sold for exports. It is a rare and highly coveted variety of honey.
